- Yield: 1 Sandwich (1 Servings)
- 1 roll Costano's Classic 8
- 3 slices Eggplant breaded and cooked
- Marinara Sauce
- Provolone Cheese
- Layer the eggplant sauce and provolone on a Costanzo's Classic 8" Sub Roll. Place under the broiler (open-faced) to melt the cheese. Top with a bit more sauce on the top of the roll and serve it up.
