Pastrami Beets

    Ingredients

    • 2 oz. Pastrami Cured Beets see below
    • 1 oz. Turmeric Scented Sauerkraut
    • 1 oz. Fried Shallots
    • 1 oz. Pea shoots
    • 2 oz. Vegan 1000 Island Dressing
    • Costanzo’s Large NY Deli Kaiser Roll

    Instructions

    1. For Pastrami beets – cure and poach beets with pastrami pickle seasoning. Once beets are cooked completely, layer on sheet pan and insert in 300 degree convection oven for 20 minutes to dry out. Cool dried beets then slice and reserve for assembly.
